• Best: Oatmeal Cookies

    • 4 1/2 cups. All-purpose flour
    • 4 1/2 cups. Quick-cooking rolled oats
    • 4 cups. Firmly packed brown sugar
    • 1 Tbsp. Baking pwdr
    • 1 Tbsp. Baking soda
    • 2 tsp Salt COOKIES
    • 1/2 cup. Butter, softened
    • 3 1/4 cups. Best: Oatmeal Cookie Mix
    • 1 pc Egg, beaten
    • 4 tsp Water
    • 1 tsp Vanilla


    1. Best Oatmeal Cookie Mix:In large bowl, stir together flour, rolled oats, sugar, baking pwdr, baking soda and salt. Transfer to airtight container; store in cold, dry place for up to 2 months.
    2. Stir well before using.
    3. Oatmeal Cookies:In large bowl, using electric mixer at low speed, beat butter into"Best:Oatmeal Cookie Mix" till well blended.
    4. Stir in egg, water and vanilla till blended.
    5. Drop by tablespoonfuls onto greased baking sheet.
    6. Bake in 375F 190C oven for about 10 min, or possibly till golden brown.
    7. Let cold in pan on rack for 3 min; remove to rack to cook completely.
    8. [Cookies can be stored in airtight container for up to 5 days or possibly frzn for up to 2 weeks.]
    9. Variations:Oatmeal Chocolate Chip Cookie:
    10. Add in 1 cup. chocolate chips, peanut butter chips or possibly minced lowfat milk chocolate-covered toffee bar after beating butter into mix.
    11. Makes 41 cookies.
    12. Oatmeal Raisin Cookies: Add in 1 cup. raisins and 1 ts cinnamon after beatingbutter into mix. Bake for 12 min.
    13. Makes 38 cookies.
    14. Hermits: Omit vanilla. Add in 1/2 c. each raisins, minced walnuts and minced candied fruit, 1 ts cinnamon, 1/2 ts nutmeg and 1/4 ts grnd cloves after beating butter into mix.
    15. Makes 44 cookies.
    16. Lemon Coconut Cookies: Omit vanilla. Add in 1/2 c. shredded coconut and 2 tsgrated lemon rind after beating butter into mix.
    17. Makes 38 cookies.
