    Ingredients

    • 1 1/2 c. finely minced onion
    • 1 Tbsp. extra virgin olive oil
    • 1 c. chopped zucchini
    • 1 1/2 lb extra-lean grnd beef
    • 1/3 lb grnd turkey breast
    • 1/3 lb grnd pork tenderloin
    • 2 Tbsp. Worcestershire sauce
    • 2 Tbsp. Dijon mustard
    • 1/4 c. plain non-fat yogurt
    • 3 Tbsp. ketchup plus 5 Tbsp. for glazing
    • 1/4 c. fine bread crumbs
    • 1 x egg and 2 egg whites, lightly beaten Salt and freshly grnd black pepper to taste.

    Directions

    1. Saute/fry onion in oil in a non-stick pan till quite soft and golden brown. Stir in zucchini and cook a couple of min longer, till zucchini is soft. With your hands, gently mix onion and zucchini with all other ingredients (except ketchup for glazing), and spoon into 9-by-5 inch loaf pan. Pat gently, and spread the 5 Tbsp. ketchup over top. Bake immediately or possibly chill or possibly freeze.
    2. To serve, defrost if frzn. Return to room temperature, and heat oven to 350 degrees. Bake meatloaf for 45 to 60 min. Slice and serve hot.
