Best Meat Loaf
Ingredients
- 2 lbs. ground chuck
- 1/3 cup chopped onion
- 1/3 cup chopped red pepper
- 1/3 cup chopped green pepper
- 3 TBSP chopped parsley
- 3 garlic cloves, minced
- 1 1/4 tsp. chili powder
- 1 1/4 tsp. dried sage
- 1 1/4 tsp. salt
- 1 tsp black pepper
- 3/4 cup milk
- 2 eggs, beaten
- 1/4 cup Worcestershire sauce
- 2/3 cup dry bread crumbs
- 4 strips bacon
- Sauce ingredients:
- 1/4 cup ketchup
- 1/4 cup chopped canned tomatoes
- 2 TBSPS brown sugar
- 1 tsp salt
- 1 tsp dry mustard
- 1/2 tsp black pepper
Directions
- In a large bowl, combine the first 10 ingredients.
- Combine the milk, eggs and Worcestershire sauce.
- Mix into the beef mixture.
- Add the bread crumbs.
- Grease a large sheet of aluminum foil.
- Place bacon strips on the foil.
- Mould the meat mixture into a loaf and place over the bacon.
- Seal the foil tightly around the loaf.
- Refrigerate for 2 hours or overnight.
- Heat oven to 350 degrees
- Place the wrapped loaf on a baking sheet.
- Bake for 1 hour.
- Carefully open the foil and drain the juices.
- Combine the sauce ingredients and spoon over the loaf.
- Bake uncovered 30 minutes longer
