Berry And Mousse Parfait
Ingredients
- 1 c. strawberries divided
- 1 c. raspberries divided
- 1 Tbsp. granular sugar substitute plus
- 1 1/2 tsp granular sugar substitute divided
- 1 1/4 c. heavy cream
- 1 Tbsp. vanilla extract
- 1/4 c. mousse mix
Directions
- In a blender, puree 3/4 c. strawberries and 3/4 c. raspberries with 1/2 tsp. sugar substitute. Coarsely chop remaining 1/4 c. strawberries and fold into the puree.
- In a large bowl, whisk 1 c. cream, remaining sugar substitute and vanilla till soft peaks form. Whisk in mousse mix; whisk till very stiff. Whisk in remaining 1/4 c. cream.
- In a parfait glass, place 1/4 c. of the berry mix. Top with 1/4 c. mousse mix; repeat layers twice. Top with a few reserved raspberries. Repeat procedure to make three more parfaits.
- This recipe yields 4 servings.
- Variation:o Chocolate mousse: Omit vanilla and add in 1 Tbsp. cocoa pwdr and sugar substitute to taste.
