  • Berry and Bran Flaxseed Muffins

    These soft and fluffy muffins are loaded with healthy ingredients and bursting with flavor.

    Ingredients

    • 2 cups all purpose flour
    • 1/2 cup brown sugar
    • 1 teaspoon ground cinnamon
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon baking soda
    • 2/3 cup ground flaxseed
    • 2/3 cup oat bran
    • 1 cup low-fat buttermilk
    • 1 egg
    • 1/2 cup Canola oil
    • 1 cup blueberries
    • 1/2 cup strawberries chopped

    Directions

    1. Preheat oven to 400 degrees F.
    2. In a large mixing bowl, whisk together flour through oat bran.
    3. In a separate bowl whisk together buttermilk through canola oil.
    4. Add liquid ingredients to dry and stir together with a rubber scraper/spatula.
    5. In a small bowl, toss berries and 1 Tablespoon of flour.
    6. Carefully add berries to batter and stir gently.
    7. Line muffin tin with paper liners and fill each 2/3 full.
    8. Bake for 20-25 minutes or until muffins are barely firm to the touch.
