Berry and Bran Flaxseed Muffins
These soft and fluffy muffins are loaded with healthy ingredients and bursting with flavor. Ingredients
- 2 cups all purpose flour
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2/3 cup ground flaxseed
- 2/3 cup oat bran
- 1 cup low-fat buttermilk
- 1 egg
- 1/2 cup Canola oil
- 1 cup blueberries
- 1/2 cup strawberries chopped
Directions
- Preheat oven to 400 degrees F.
- In a large mixing bowl, whisk together flour through oat bran.
- In a separate bowl whisk together buttermilk through canola oil.
- Add liquid ingredients to dry and stir together with a rubber scraper/spatula.
- In a small bowl, toss berries and 1 Tablespoon of flour.
- Carefully add berries to batter and stir gently.
- Line muffin tin with paper liners and fill each 2/3 full.
- Bake for 20-25 minutes or until muffins are barely firm to the touch.
