Bernese rosti

- 4 kg boiled potatoes
- 4 X salt
- 200g butter
- 240 g lard
- 200 g cubed bacon
- 2 1/3 cup milk
Directions
- Skin potatoes, grate into thin sticks with Rösti grater and sprinkle with salt. (Here less salt is required as bacon adds flavour).
- Heat butter and lard in frying pan, add cubed bacon and potatoes and fry lightly, turning several times.
- Form cake and cover with upturned plate. Fry on low heat for 20 mins. Remove plate, pour milk over Rösti, cover again and fry for about 10 mins or until crisp.
- Turn onto plate and serve with coffee and milk.
