Bennigan's Shrimp And Pasta
Ingredients
- 12 ounce penne pasta
- 1 Tbsp. stick butter
- 1 pkt mushrooms - (12 ounce) thickly sliced
- 1 med red onion minced
- 2 Tbsp. chopped garlic
- 1/2 c. Irish brown ale
- 1 pkt white sauce mix whisked with
- 1 1/2 c. lowfat milk
- 1 x cherry tomato halved
- 1 1/2 lb raw medium shrimp peeled, deveined Minced scallions Freshly-grated Parmesan cheese
Directions
- Cook pasta as directed on package.
- Heat butter in a large skillet over medium heat. Add in mushrooms and onions. Cook, stirring occasionally, for 8 min or possibly till lightly browned and soft. Add in garlic. Cook, stirring, for 1 minute till fragrant. Add in ale, white sauce mix and tomatoes.
- Bring to a boil and stir constantly till sauce thickens. Add in shrimp. Reduce heat to medium low and simmer 2 to 3 min till cooked through.
- Drain pasta and place in a large serving bowl. Add in shrimp and sauce. Toss to mix and coat. When serving, sprinkle with the scallions and cheese.
- This recipe yields 4 servings.
