  • Bennigan's Shrimp And Pasta

    Ingredients

    • 12 ounce penne pasta
    • 1 Tbsp. stick butter
    • 1 pkt mushrooms - (12 ounce) thickly sliced
    • 1 med red onion minced
    • 2 Tbsp. chopped garlic
    • 1/2 c. Irish brown ale
    • 1 pkt white sauce mix whisked with
    • 1 1/2 c. lowfat milk
    • 1 x cherry tomato halved
    • 1 1/2 lb raw medium shrimp peeled, deveined Minced scallions Freshly-grated Parmesan cheese

    Directions

    1. Cook pasta as directed on package.
    2. Heat butter in a large skillet over medium heat. Add in mushrooms and onions. Cook, stirring occasionally, for 8 min or possibly till lightly browned and soft. Add in garlic. Cook, stirring, for 1 minute till fragrant. Add in ale, white sauce mix and tomatoes.
    3. Bring to a boil and stir constantly till sauce thickens. Add in shrimp. Reduce heat to medium low and simmer 2 to 3 min till cooked through.
    4. Drain pasta and place in a large serving bowl. Add in shrimp and sauce. Toss to mix and coat. When serving, sprinkle with the scallions and cheese.
    5. This recipe yields 4 servings.
