    I have not seen a lot of recipes for Beets (Beet root) leaves. My mother used to cook this dish and I love this. Beet leaves are quite tasty and have a nice aroma after cooked.

    Ingredients

    • Leaves of one bunch beets (came out about 8 oz leaves with tender stems)
    • 1/4 teaspoon chili powder
    • salt to taste
    • 1 - 2 teaspoons unsweetened shredded coconut
    • 1 tablespoon canola oil
    • 1/2 cup chopped red onion
    • 2 - 3 dried red chilies broken into 2 - 3 small pieces

    Directions

    1. Wash beet leaves thoroughly and shred/cut them into very small pieces
    2. Add shredded beet leaves to a skillet and add salt, chili powder and cover and cook for about 10 minutes or until water is evaporated (Do not add extra water since the water released from the leaves is enough for cooking. Also adding extra water will make this dish quite soggy)
    3. Add coconut and fry for another 2 - 3 minutes
    4. In another skillet add oil and fry until golden brown
    5. Add red chilies and fry for another minute or two
    6. Add cooked beet leaves and mix well and fry for about 4 - 5 minutes on low flame
    7. This goes well with rice
