Beet Ketchup
Simple and wholesome beet "ketchup" contains no sugar and can be used as a spread for just about anything. Photo is courtesy of Aramark. Ingredients
- 2 1/2 lb beets
- 2 1/2 cup ACV (Apple cider vinegar)
- 1/4 cup diced sweet onion
- 1 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cloves
- 1/4 teaspoon groud black pepper
Directions
- Wash, peel and steam the beets until tender; 20-30 minutes.
- Saute' onions until caramelized.
- Add all ingredients to a blender or food processor and puree until smooth.
- Store in an airtight container. Serve chilled.
