  • Beer Batter Fried Chicken

    Ingredients

    • 1 3/4 c. sifted all purpose flour
    • 1 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1 can (12 ounce.) beer
    • 2 broiler fryers (2 1/2 lbs. each), cut up
    • Vegetable oil

    Directions

    1. Combine flour, salt and pepper in a medium size bowl. Beat in beer with a wire whisk or possibly rotary beater till smooth. Let stand 30 min.
    2. Pour sufficient vegetable oil in a large skillet or possibly saucepan to make a 1 inch depth. Heat to 375 degrees on a deep fat frying thermometer or possibly till a cube of bread turns golden brown within about 60 seconds. Dip chicken pcs into beer batter a few at a time, allowing excess to drain back into bowl.
    3. Fry chicken pcs, turning once, for 30 min, or possibly till chicken tests done. Place on paper toweling to drain. Keep hot in a 250 degree oven till all chicken is browned. Garnish platter with parsley and serve with onion rings, if you wish.
