  • Beefy Enchilada Skillet Dinner

    Your family will love the south-of-the-border flavor in this super-fast skillet meal.

    Ingredients

    • 1 lb. ground beef
    • ½ cup chopped onion
    • 1 (10 oz.) can enchilada sauce
    • 1 (6 oz.) can tomato paste
    • 1 (10 oz.) can diced tomatoes and green chilies (drained)
    • 1 cup Monterey Jack cheese, divided
    • ½ cup corn chips, crushed

    Directions

    1. In a large skillet, brown ground beef over medium heat. Add onion; continue cooking until onion is soft and translucent; drain off fat.
    2. Add enchilada sauce, tomato paste, diced tomatoes and green chilies, and ½ cup of cheese; stir to combine.
    3. Reduce heat to low; sprinkle with crushed corn chips and remaining cheese. Cover and continue to simmer on low until cheese is melted, about 5 minutes.
