Beefy Enchilada Skillet Dinner
Your family will love the south-of-the-border flavor in this super-fast skillet meal. Ingredients
- 1 lb. ground beef
- ½ cup chopped onion
- 1 (10 oz.) can enchilada sauce
- 1 (6 oz.) can tomato paste
- 1 (10 oz.) can diced tomatoes and green chilies (drained)
- 1 cup Monterey Jack cheese, divided
- ½ cup corn chips, crushed
Directions
- In a large skillet, brown ground beef over medium heat. Add onion; continue cooking until onion is soft and translucent; drain off fat.
- Add enchilada sauce, tomato paste, diced tomatoes and green chilies, and ½ cup of cheese; stir to combine.
- Reduce heat to low; sprinkle with crushed corn chips and remaining cheese. Cover and continue to simmer on low until cheese is melted, about 5 minutes.
