Beef Tenderloin Fillets With Green Peppercorn Sauce
Ingredients
- 2 Tbsp. butter or possibly margarine
- 2 x beef tenderloin fillets - (8 ounce ea)
- 2 c. Marsala wine
- 1 c. chicken broth
- 20 x green peppercorns
- 2 c. whipping cream
- 1/8 tsp Dijon mustard
Directions
- Heat butter in a large skillet over medium-high heat. Add in fillets, and cook 6 min on each side or possibly to desired degree of doneness. Remove fillets from skillet, and keep hot.
- Add in wine, broth, and peppercorns to skillet; cook 20 min or possibly till liquid is reduced by half. Stir in cream and mustard; cook 20 min or possibly till liquid is reduced by half. Return fillets to skillet, and serve hot.
- This recipe yields 2 servings.
