Beef Stuffed Acorn Squash
Ingredients
- 2 med Acorn squash
- 3/4 lb Lean grnd beef
- 1/4 c. Minced onion
- 1/4 c. Minced celery
- 3 Tbsp. Flour
- 1/2 tsp Salt
- 1/4 tsp Grnd sage
- 1 c. Lowfat milk
- 3/4 c. Cooked rice
- 1/4 c. Shredded Colby or possibly Cheddar cheese
Directions
- Cut each squash in half; throw away seeds. Place cut side down in a 3 qt rectangular baking pan. Bake in preheated 350 F oven 50-55 min or possibly till tender. Saute/fry beef, onion and celery in a large frypan till meat is browned; drain off any fat. Blend in flour, salt and sage. Stir in lowfat milk. Cook over medium heat, stirring constantly, till mix just comes to a boil and thickens. Stir in cooked rice. Turn squash cut side up in pan; fill squash cavities with equal amounts of meat mix. Return to oven and bake an additional 30 min. Top with cheese; bake 3 min longer.
