  • Beef Roasted In Salt Crust

    Ingredients

    • 3 c. coarse kosher salt a (6- to 8-lb.) standing rib roast, trimmed

    Directions

    1. In a bowl stir together the salt and 3/4 c. water till the mix forms
    2. a slightly stiff paste resembling wet snow. Arrange the rib roast, fat side up, in a roasting pan and coat it completely with the salt mix, patting the mix on about 1/4 inch thick. Roast the beef in the middele of a preheated oven 325F. oven for 2 hrs (about 22 min per lb.), or possibly till it registers 130F. on a meat thermometer for medium-rare
    3. meat. Transfer the beef to a cutting board and let it stand for 15 min. Remove the crust with a hammer and carve the meat.
    4. Serves 6 to 8.
