    Beef Fried Rice w/ Vegetables

    This is a recipe that I made up myself with some of my favorite foods. It is easy, and uses mostly items that you normally keep in your Pantry and Fridge. Garlic, ginger and soya sauce season this recipe and has an oriental taste. An easy one pot dinner.

    Ingredients

    • 1 pound lean ground beef
    • 2 cups cooked rice, white or brown
    • 3 cups vegetables cut on the diaginal
    • (1 onion, 2 carrots, 2 stalks celery, 1 head of broccali 1 green/red/orange/yellow pepper, 1 cup cremeli mushrooms
    • 1/2 white wine (or water)
    • 2 tablespoons olive oil
    • 3 cloves garlic, minced
    • 2 tablespoons fresh ginger (1 tsp dry ginger)
    • 1/4 tsp sea salt & pepper
    • 1/2 cup fresh parsley, chopped
    • 2 tablespoons soya sauce

    Directions

    1. Cook rice, set aside
    2. Cook beef in 1 tablespoons of olive oil, adding salt & pepper, set aside
    3. Prepare fresh vegetables, wash all vegetables, cut onions, carrot and celery on the diaginal. Separate the broccali heads from stalk. Peel stalk and cut on the diaginal. Cut your choice of pepper or a combination of each color into slices. Slice mushrooms.
    4. Stir fry vegetables 4 minutes in a wok or very large frying pan. Add mushrooms after the first 4 minutes.
    5. Mince garlic and ginger, add to vegetables and stir.
    6. Add 1/2 cup of wine or water, cook 3 more minutes until desired tenderness is achieved. Hint: Best if vegetables are on the tender crisp side.
    7. Add beef, stir until mixed.
    8. Add rice, stir until mixed.
    9. Add soya sauce. Heat mixture covered to heat through. Stir every minute for approximately 8 minutes.
    10. Add fresh parsley the last 2 minutes. Serve.
    11. Makes enough for a family of 4.
