  • Beef Enchilada Casserole

    Ingredients

    • 1 lb grnd beef
    • 1 env taco seasoning mix
    • 6 x 6 inch corn tortillas divided
    • 3 c. shredded Monterey jack cheese
    • 1 med red onion minced
    • 1 x 10 oz can enchilada sauce
    • 2 x green onions sliced

    Directions

    1. Preheat oven to 350 degrees. Cook beef in a large skillet over medium-high heat, stirring till browned and crumble., about 5 min. Drain. Add in seasoning mix; mix well.
    2. Grease an 8-inch round casserole; arrange half of tortillas over bottom. Layer with beef, 2 c. Monterey jack and onion.
    3. Arrange remaining tortillas over onion. Pour enchilada sauce over tortillas. Bake till tortillas are soft and juices bubble, about 35 min.
    4. Layer remaining cheese over tortillas. Bake till cheese is bubbly, about 10 min. Top with green onions.
    5. NOTES : Variation: For a touch of heat, add in 1 (4 oz) can of minced green Chiles with the seasoning fold in step 1.
