Beard's Spinach Quiche
Ingredients
- 1 1/2 x -(up to)
- 2 lb Fresh spinach, cooked, liquid removed
- 1/8 tsp Nutmeg
- 1 tsp Dry tarragon
- 1 Tbsp. Lemon juice Salt and pepper to taste
- 2 tsp Parsley, minced
- 1 x (9-inch) pastry shell
- 1/2 c. Feta cheese
- 4 x Large eggs
- 3/4 c. Cream
- 1/2 c. Plain yogurt
Directions
- Cook pastry shells 5 min. Cook spinach. Drain thoroughly! Chop very fine. Combine spinach with nutmeg, tarragon, lemon juice, salt, pepper and parsley and spread on bottom of pastry. Sprinkle cheese on top. Beat Large eggs slightly with yogurt and cream and blend well. Pour over spinach mix.
- Bake at 350 about 30 min or possibly till custard is set.
- Serves 6-8.
