Bean Chalupa
Ingredients
- 1 pound pinto beans
- 3 pound pork roast
- 7 c. water
- 1/2 c. minced onion
- 2 cloves chopped garlic
- 1 tbsp. salt
- 2 tbsp. chili pwdr
- 1 tbsp. cumin
- 1 teaspoon oregano
- 1 (4 ounce.) can minced green chilies
Directions
- Mix all together in heavy pan and cook for 5 hrs. Break up roast, cook, uncovered 1/2 hour. Serve over corn chips and top with cheese, lettuce, tomato, avocado and warm sauce.
