  • BBQ Oysters w/ Horseradish Cream

    Hot oysters off the grill with a little horseradish cream sauce that melts when it hits the hot oysters...excellent. When we do a Oyster BBQ, we usually throw in a few different sauces and this is always a hit

    Ingredients

    • 1 cup heavy cream
    • 5-6 tablespoons grated plain horseradish (to taste if the horseradish is extra-hot)...you could use ~ tablespoons if just a hint of the horseradish (I've also used jarred horseradish which works just fine)
    • 3 tablespoons fine chopped fresh chives
    • Zest from 1 lemon (2 if small lemons)
    • Juice from 1 lemon (to taste)
    • Salt & pepper to taste
    • 2 Dozen Oysters

    Directions

    1. Beat the cream to soft peaks (in a chilled bowl or bowl in ice bath).
    2. Fold in horseradish, chives, lemon zest lemon juice and salt & pepper.
    3. Taste for seasoning, the mix should be well seasoned (mainly for lemon, horseradish as the oysters will have some salt in them)
    4. To grill oysters (shucked or not). Heat up grill. For shelled oysters, grill oysters rounded side down (one side will be flatter (that's the top side). Grill 5-10 minutes until the shells open. Transfer the oysters to a serving plate and remove top shell. Place a spoonful of the cream sauce on each oyster and serve immediately.
    5. If the oysters are shucked, add dollup of cream sauce during cooking to fully melt down/in.
