    BBQ Chicken Bombs

    These are absolutely fantastic ! If you love heat , bacon, cheese , chicken and BBQ sauce these chicken roll ups are for you and did I mention super easy too ?

    Ingredients

    • 4 boneless chicken breast ( makes 8 chicken bomb rolls)
    • 4 jalapenos sliced in half length wise and deseeded
    • 8 slices of bacon ( par cooked)
    • 4 oz cream cheese , softened
    • 3/4 C shredded cheddar cheese or Colby
    • 1/4 tsp chipolte powder if you want less heat just use chili powder
    • Salt and pepper to taste
    • 1 C of your favorite BBQ sauce

    Directions

    1. Preheat oven to 400 degrees
    2. Slice chicken breast in half and then place 1 piece of chicken at a time inside a gallon size storage bag and pound out to a 1/4 " thickness repeat with all chicken pieces
    3. Sprinkle the chicken pieces with salt and pepper
    4. Mix the the cream cheese , cheddar cheese , chili powder together season lightly with salt and pepper mix again
    5. Stuff each half of jalapeño with the cream cheese mixture set aside
    6. Place 4 pieces of bacon at a time on a plate lined with paper towels place another sheet of paper towel on top of the bacon slices and microwave for 2 minutes set aside
    7. Place a half of jalapeño on each chicken breast and roll up
    8. Roll one slice of bacon on each roll of chicken and secure with a toothpick
    9. Place chicken rolls on a pan lined with nonstick foil
    10. Place in the 400 degree for 15 minutes then drop the temperature to 375 degrees for another 15 minutes
    11. Begin basting the chicken rolls half way through the cooking time and baste them about 3 times
    12. After the last basting place the pan under the broiler for a minute or two to set the BBQ sauce
