  • Basil Chicken

    I used some wild rice I had to serve this chicken over, but you can use rice noodles or any type of rice you would like. And don't be afraid of the fish sauce!! You really do need it. It adds a depth of flavor that can't be found otherwise.

    Ingredients

    • 4 chicken breasts, diced
    • 5 T fish sauce
    • 1 medium onion, diced
    • 2 T minced garlic
    • 1 green pepper, diced
    • 4 green onions, diced
    • 1 1/2 c torn basil leaves (loose pack)
    • 2 tsp brown sugar
    • 4 T water
    • 1/2 tsp pepper
    • 4 T olive oil

    Directions

    1. Heat the olive oil in a skillet and add the onion and green peppers. Cook until translucent.
    2. Add the garlic and cook 30 seconds until fragrant.
    3. Add the chicken and cook until the chicken is cooked through. About 8-10 minutes.
    4. While the chicken is cooking, mix together the fish sauce, water and brown sugar in a small bowl.
    5. Add to the chicken and cook until the sauce starts to slightly dry up.
    6. Add the green onion and basil and cook until the basil just wilts.
    7. Serve over noodles or rice.
