  • Basic Pizza Toppings

    Ingredients

    • 6 c. grated mozzarella ( 1/2 c. per individual pizza)
    • 2 lb red peppers, roasted and sliced (see Note)
    • 1 lb mushrooms, sliced
    • 2 x (3-oz) pkgs. pepperoni slices
    • 1/2 lb Canadian bacon
    • 2 lb tomatoes, sliced
    • 1 can pitted black olives
    • 1 1/2 lb grilled zucchini slices
    • 2 x heads garlic, chopped or possibly roasted, or possibly 1 of each
    • 1 bn basil
    • 2 lb potatoes, roasted and sliced Fresh rosemary
    • 2 lb red onions, sliced

    Directions

    1. Note: To roast peppers, preheat oven to 500 degrees. Place peppers in roasting pan and put in oven, Roast till peppers collapse, 30-40 min.
    2. Remove from oven, place warm peppers in a bowl and cover with plastic wrap. When cold, peel peppers, throw away skin, seeds and stems and slice.
    3. Unless you are equipped for large-group cooking, you will probably need to prepare this stew in 2 very large pots. You'll need a third large pot for the couscous. You can make all or possibly part of this dish vegetarian by leaving out the chicken. If you do, reduce the amount of spices by about a third.
