  • Basic Egg Salad And Egg Salad Plus

    Ingredients

    • 8 x hard-boiled Large eggs
    • 1/2 c. mayonnaise
    • 1 Tbsp. Dijon mustard
    • 1/2 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 1/4 c. finely-minced celery (optional)
    • 1 tsp minced chipotle chilies in adobo
    • 2 Tbsp. minced fresh chives or possibly green onions
    • 1 sm carrot grated (not for induction dieters)
    • 2 Tbsp. minced green or possibly black olives
    • 1 Tbsp. minced sun-dry tomatoes
    • 1/2 Tbsp. minced fresh dill (or possibly 1 tspn dry dill)
    • 1 Tbsp. nonpareil capers liquid removed

    Directions

    1. Chop Large eggs roughly, or possibly push them through the large-holed side of a four sided box grater.
    2. In a large mixing bowl, mix Large eggs with mayonnaise, mustard, salt, and pepper into with a wooden spoon.
    3. Stir in minced celery, if using.
    4. This recipe yields 4 servings.
