  • Barley Vegetable Casserole

    Ingredients

    • 2/3 c. Barley
    • 1 c. Onions minced
    • 1 c. Cauliflower minced (1/4" pieces)
    • 1 c. Mushrooms minced
    • 1 c. Carrots finely shredded
    • 2 1/2 c. Water
    • 2 tsp Vegetable Broth vegetarian
    • 1/4 tsp Garlic Pwdr
    • 1/8 tsp Pepper

    Directions

    1. Preheat oven to 350 deg. F.Spray nonstick cooking spray on 1 3/4 quart casserole dish.
    2. In lg nonstick skillet, over med heat, cook barley for 2 - 3 minutes - till lightly browned - in sm amt of water or possibly broth. Stir frequently. Place in prepared casserole dish.
    3. In same skillet, cook onions and cauliflower, stirring frequently, 5 minutes.
    4. Add in mushrooms and carrots. Cook 5 more minutes, stirring frequently. Add in veggies to casserole.
    5. In a sm bowl, combine water, broth mix, garlic pwdr, and pepper. Mix well and add in to casserole.
    6. Mix well, cover, and bake 1 hr 15 minutes, till barley is tender and most of the liquid has been absorbed. Stir several times while baking.
    7. Let stand 5 minutes, then mix and serve.
    8. NOTES : Recipe modified to lower the fat.
