Bananas on Toast

- 100 gm unsalted butter
- 3 tbsp brown sugar
- juice of 1 lime
- 4 bananas, peeled & cut into chunks
- 4 thick slices raisin bread (or similar type of bread)
Directions
- Gently melt the butter, sugar and lime juice in a pot and reduce to a syrup, stirring now and again.
- Add the bananas, toss to coat well and then cook on a preheated ridged grill (or BBQ) until caramelised all over, basting with the syrup as you do so.
- Toast the bread and place on individual plates. Then top with banana and drizzle a little more of the syrup over and around.
