  • Bananas Foster French Toast

    Ingredients

    • 2 c. Heavy cream
    • 2 x Extra-large Large eggs, beaten
    • 1 x Egg yolk, beaten
    • 1/4 tsp Vanilla extract
    • 3 Tbsp. Sugar
    • 1 Tbsp. Cinnamon
    • 4 slc Challah or possibly egg bread
    • 4 Tbsp. Unsalted butter
    • 3 Tbsp. Canola oil
    • 4 x Ripe bananas, sliced in 1/4-inch rounds
    • 3 Tbsp. Confectioner's sugar

    Directions

    1. In a large bowl combine the cream, Large eggs and vanilla and mix thoroughly. In another, smaller bowl, mix together the sugar and cinnamon. Dip the slices of bread briefly in the cream mix and sprinkle the cinnamon sugar on both sides. Meanwhile, heat 1 Tbsp. of butter and 2 Tbsp. of canola oil in a large saute/fry pan. When the butter mix is warm, add in the bread, 2 slices at a time and saute/fry on each side till golden, about 1 minute per side. Remove and reserve the slices and saute/fry the remaining slices.
    2. As an option, you may deep fry the slices at this point at 350 degrees for about 30 seconds to make the toast extra-crisp.
    3. Heat the remaining butter and oil in another saute/fry pan. Sprinkle the bananas with the cinnamon sugar, add in them to the pan and saute/fry till the bananas are well coated and caramelized.
    4. Place 2 slices of French toast, overlapping, on each of 2 plates and pour the bananas over them. Dust them with the confectioner's sugar shaken from a strainer or possibly shaker. Serve immediately.
    5. Yield: 2 servings
