  • Banana Lemon Ginger Chutney

    Ingredients

    • 1 Tbsp. Peanut oil
    • 1 x Onion, thinly sliced
    • 1 Tbsp. Chopped fresh ginger
    • 4 x Almost ripe bananas, cut into 1-inch thick rounds
    • 1/2 c. Brown sugar
    • 1/4 c. Fresh lemon juice, (about 1 lemon)
    • 1/4 c. Red wine vinegar
    • 1/4 c. Orange juice
    • 1 pch Grnd mace, grnd nutmeg, grnd cloves, and grnd cinnamon Salt and freshly cracked black pepper to taste

    Directions

    1. In a large saute/fry' pan, heat the peanut oil over high heat till warm but not smoking. Add in the onion slices and saute/fry', stirring occasionally, till translucent/soft, about 5 to 6 min. Lower the heat to medium, add in the ginger, and saute/fry' an additional 1 minute. Add in all the remaining ingredients, bring to a simmer, reduce heat to low, and cook till the liquid is about as thick as catsup, about 10 to 15 min. The chutney will keep, covered and refrigerated, about 2 weeks.
