  • Banana Cold Souffle (Jamaican)

    Ingredients

    • 1 Tbsp. unflavored gelatin
    • 1/4 c. water cool
    • 3 x Large eggs
    • 1/2 c. evaporated lowfat milk
    • 1 Tbsp. lemon juice
    • 2 Tbsp. sweetened condensed lowfat milk
    • 1/2 c. sugar
    • 4 Tbsp. banana puree DRESSING
    • 1 c. whipped cream
    • 1 x banana ripe
    • 7 x strawberries or possibly cherries yellow food coloring lime or possibly lemon juice

    Directions

    1. Sprinkle gelatine over cool water to dissolve. Separate Large eggs, beat yolks slightly, add in lemon juice. Heat evaporated lowfat milk in double boiler, add in egg yolk and condensed lowfat milk, stirring constantly till thick. Stir in banana puree. Remove from heat & add in gelatine. Beat egg whites and gradually add in sugar. Fold gently into banana mix. Pour into bowl or possibly souffle dish. Refrigerate2-3 hrs.
    2. DRESSING: Whip cream, add in lime or possibly lemon juice & add in sufficient drops of colouring to make the cream brighter colour than the top of the souffle. Spread over souffle; garnish with banana slices & cherries.
