Balsamic fingerling potatoes
Ingredients
- Fingerling potatoes-2 pounds
- Aged Balsamic vinegar-1to1 1/2 cups
- 1 shallot chopped finely
- Butter-2 Tbs.
Directions
- Roast potatoes(coated in extra virgin olive oil) in 400 degree oven untill tender. About 30 min. Or you can boil.
- Meanwhile, saute shallot in butter in a saucepan until softened
- Add balsamic vinegar and reduce by half into a syrup
- Coat potatoes in balsamic syrup
- Season to taste
- Enjoy
