  • Baked Sweet Potatoes With Amaretto

    Ingredients

    • 5 lb sweet potatoes
    • 1/2 c. butter
    • 1/2 c. brown sugar packed
    • 1/4 c. amaretto
    • 1/4 c. orange marmalade
    • 1/2 tsp salt
    • 20 x gingersnap cookies crushed

    Directions

    1. Preheat oven to 450F. Lightly grease sweet potatoes and bake till soft, about 40 min. Let cold, then peel and mash well with butter, brown sugar, amaretto, marmalade and salt.
    2. Grease a shallow 3-qt baking dish, spread potatoes proportionately in dish, then crumble the cookies over them. Bake at 350 for 35-45 min.

    4. NOTES :Since we are going out for Thanksgiving dinner I have been doing some cooking which will capture some of my favorite flavors which I might miss at the restaurant. Here are some good recipes.
    5. The sweet potatoes were delicious-originally posted to the TNT holiday swap by Kathi Sandler. I scaled the recipe down to 3 servings and it scaled wonderfully. Along with which we had the Maple-Mustard Pork Roast posted to Eat-L by Claudia Knowles. I used pork tenderloin to cut down on the fat. I think I might marinate this in the sauce next time to get more of the delicious flavor. We also had creamed onions. What a fabulous meal of favorites.
