  • Baked Pork And Beans

    Ingredients

    • 2 1/2 lb Dry navy beans
    • 1 tsp Baking soda
    • 4 x Smoked ham hocks
    • 1 1/2 lb Ends and pcs smoked pork butt
    • 2 med Onions
    • 3/4 c. Molasses
    • 1/3 c. Dark brown sugar
    • 1 Tbsp. Dry mustard
    • 2 Tbsp. Ketchup
    • 1/2 tsp Fresh grnd pepper Salt to taste
    • 6 x Strips good bacon for garnish

    Directions

    1. Use a 4-qt bean pot.
    2. Soak beans 12 hrs. Parboil beans for 10 min with baking soda.
    3. Drain and rinse in cool water. Simmer hocks for till tender. Remove hock, cold and remove meat and reserve water. Place 1/2 pork on bottom of bean pot with quartered onion. Put beans in pot. Put the rest of the pork on top. Add in the bones and skin from the hocks. Fold in molasses, brown sugar, mustard, ketchup, grnd pepper and salt to taste with warm cooking water from the hocks. Pour over beans. Put in 300-degree oven for four hrs. After four hrs remove hock bone and skin, check liquid add in water as needed, add in the meat from the ham hocks and criss cross bacon on top of mix. Continue baking for two more hrs. Serve with warm sauce, fresh biscuits or possibly cornbread.
    4. Makes 12 portions or possibly 1 Belly portion
    5. For an interesting presentation cook up 12 additional hocks till tender. Place beans in a soup plate and add in 1 hock to each plate. Let the eaters pull the meat off the hock and enjoy with the beans.
