Baked Mashed Potatoes With Cream Cheese
Ingredients
- 12 med Sized potatoes, peeled, cooked & warm
- 1 pkt (8-ounce) cream cheese, room temp
- 1/4 c. Butter
- 1/2 c. Lowfat sour cream
- 1 1/2 c. Lowfat milk
- 2 x Large eggs, slightly beaten
- 1/4 c. Onions, finely minced
- 1 tsp Salt Pepper to taste
Directions
- Mash warm potatoes in large bowl with mixer. Cut up cream cheese in small pcs and add in to bowl along with the butter. Beat till cheese and butter are melted. Fold in lowfat sour cream. Add in Large eggs and onions to lowfat milk. Add in this to the potatoes. Add in salt and pepper; beat well till light and fluffy. Place in greased casserole dish. Score the top with a fork for appearance and bake in preheated oven at 350 degrees F for 45 min or possibly till lightly brown on top.
- Let them cold for a few min before serving.
