Baked Mackerel With Lemon Thyme Sun Dried Tomatoes And Olives
Ingredients
- 4 x mackerel filleted
- 1 x juice of 2 lemons
- 5 Tbsp. extra virgin olive oil
- 1 tsp fresh thyme leaves
- 6 piece sun dry tomato cut into thin strips
- 16 x black olives stoned and sliced minced fresh chervil
- 1 x salt and pepper
Directions
- Lay the mackerel fillets in an oiled shallow oven proof dish in a single layer and season with salt and pepper.
- Pour over the lemon juice cover and leave to marinate for 48 hrs turning the fish occasionally. Uncover scatter with thyme and spoon on the extra virgin olive oil.
- Bake at 190C/375F/Gas Mark 5 for 10 min.
- Sprinkle over the tomato and olives and bake for a further 5 min till the mackerel is cooked through.
- Serve warm or possibly cool.
