    Baked Macaroni and Cheddar with Broccoli

    I acutally tried this dish with bite sized pieces of chicken smoked sausage and it was very good.

    Ingredients

    • 1 bunch of broccoli(fresh or frozen, thawed), cut into bite size pieces
    • 1 half pound whole wheat macaroni or other small pasta
    • 2 tbls butter
    • 1/2 cup finely chopped onion or shallots
    • 1 1/2 tbls whole wheat flour
    • 2 cups skim or low-fat milk
    • 1 1/2 tbls cornstarch
    • 6 ozs cheddar cheese, cut into small cubes
    • 3 tbls grated parmesan cheese
    • salt and pepper
    • dash of garlic powder
    • 2 tbls panko bread crumbs

    Directions

    1. Cook pasta al dente
    2. Lightly grease a 2.5 quart casserole dish and spread broccoli in an even layer, preheat oven to 400 degrees
    3. Cook onion in pot with 1 tbls butter until softened, about 4 minutes
    4. Stir in flour
    5. Wisk in 1 cup of milk until thickened
    6. Wisk the cornstarch with the remaining milk, then wisk the mixture into the pot
    7. Simmer, wisking until sauce thickens, 3 to 5 minutes
    8. Lower the heat and stir in cheddar and half of the parmesan
    9. Stir occasionally until cheese is melted, then mix in pasta
    10. Season with salt and pepper
    11. Spoon mixture over broccoli
    12. Melt 1 tbls butter then mix in bread crumbs, garlic powder and remaining parmesan then sprinkle on top of pasta
    13. Bake until golden, about 20 minutes
