Baked Macaroni and Cheddar with Broccoli

- 1 bunch of broccoli(fresh or frozen, thawed), cut into bite size pieces
- 1 half pound whole wheat macaroni or other small pasta
- 2 tbls butter
- 1/2 cup finely chopped onion or shallots
- 1 1/2 tbls whole wheat flour
- 2 cups skim or low-fat milk
- 1 1/2 tbls cornstarch
- 6 ozs cheddar cheese, cut into small cubes
- 3 tbls grated parmesan cheese
- salt and pepper
- dash of garlic powder
- 2 tbls panko bread crumbs
Directions
- Cook pasta al dente
- Lightly grease a 2.5 quart casserole dish and spread broccoli in an even layer, preheat oven to 400 degrees
- Cook onion in pot with 1 tbls butter until softened, about 4 minutes
- Stir in flour
- Wisk in 1 cup of milk until thickened
- Wisk the cornstarch with the remaining milk, then wisk the mixture into the pot
- Simmer, wisking until sauce thickens, 3 to 5 minutes
- Lower the heat and stir in cheddar and half of the parmesan
- Stir occasionally until cheese is melted, then mix in pasta
- Season with salt and pepper
- Spoon mixture over broccoli
- Melt 1 tbls butter then mix in bread crumbs, garlic powder and remaining parmesan then sprinkle on top of pasta
- Bake until golden, about 20 minutes
