Baked Cod Fillets with a Sriracha Mayo Sauce
Light and Fluffy Baked Cod with a bit of a kick! Ingredients
- 4 Fresh Cod Fillets (about 2-1/2 pounds)
- 2 tablespoons Sriracha, 1/2 lemon (juice only)
- One cup Panko
- one teaspoon garlic salt
- 1/4 scant Cup Sriracha
- 1/2 Cup Mayonnaise
- 2 Tablespoons Sweet Relish
- Lemon Wedges for serving
Directions
- Lay your Cod Fillets on a clean work surface and brush both sides with Sriracha and Lemon Juice (mix together in a ramekin)
- Coat in Panko and garlic Salt each Cod Fillet and place on a rimmed baking sheet pan in a single layer
- Bake in a 400 F Hot Oven for 20 minutes (Or until Cod Flakes apart easily)
- Sauce: Mix Sriracha and real mayonnaise, sweet relish together in a small bowl, refrigerate until ready to serve
- Note: I like to spoon sauce on the plate then add Baked Cod FIllets on top, serve with asparagus on the side, lemon wedges
