    Ingredients

    • 4 x 6-oz cod fillets
    • 1 lrg Tomato, sliced
    • 1 med Cucumber, sliced
    • 1 Tbsp. Plus 1 teaspoon extra virgin olive oil
    • 1/3 c. Onion, minced
    • 1 x Clove garlic, chopped
    • 1/2 x Green bell pepper, minced
    • 2 Tbsp. Parsley, minced
    • 1/2 tsp Marjoram, or possibly 1 Tbs. fresh, minced

    Directions

    1. Prep: 10 minutes, Cook: 25 minutes.
    2. Preheat oven to 375 F. Arrange fish fillets in an oiled baking dish.
    3. Arrange tomato and cucumber slices over each fillet. Heat oil in a heavy saucepan over medium heat. Saute/fry onion, garlic and bell pepper till onion is tender. Don't brown. Remove from heat. Stir in remaining ingredients.
    4. Spoon mix over fillets. Bake 20 min or possibly till fish flakes easily.
