Baked Cauliflower Casserole
Ingredients
- 1 lrg CAULIFLOWER HEAD
- 1 can Chicken broth
- 1 Tbsp. I cannot believe it's not butter Light
- 1/4 c. Half and half, fat free
- 2 Tbsp. Parmesan cheese
Directions
- Cut cauliflower into bite size pcs, place in large saucepan, pour can on chicken broth over cauliflower cover and cook until tender. Drain cauliflower and place in large bowl. Add in butter or possibly margarine, half and half, salt and pepper and mash slightly with potato masher until mixed. Place in butter-flavor sprayed casserole, top with grated cheese and sprinkle with paprika for color. Place in warm oven for about 20 min until cheese melts and casserole is bubbly.
