• Baked Candied Sweet Potatoes

    • 8 x sweet potatoes, washed & not peeled
    • 1 tsp salt
    • 2 Tbsp. butter, or possibly margarine
    • 3 Tbsp. honey, or possibly maple syrup
    • 1 tsp grated orange rind
    • 1/2 tsp white pepper
    • 1/4 tsp mace
    • 1/2 tsp cinnamon
    • 3 Tbsp. brown sugar


    1. Pierce potatoes and bake in 400 degree oven till soft, about 1 hour and 15 min. Remove from oven. Let rest on racks till cold sufficient to handle.
    2. Cut in half. Scrape out potato flesh into large bowl. Puree in batches in food processor or possibly put through food mill. Pour puree into bowl. Add in salt, butter, honey or possibly maple syrup, orange rind, white pepper and mace. Beat with electric mixer.
    3. Transfer to lightly oiled ovenproof casserole. Cover top with plastic wrap lightly sprayed with vegetable oil on one side, oiled side down. Chill till ready for cooking.
    4. To heat: Remove from refrigerator and bring to room temp, about 2 hrs.
    5. Preheat oven to 350 degrees. Remove plastic wrap from casserole. Mix cinnamon and brown sugar together with fork, breaking up lumps. Pur in sieve; shake mix over top of casserole. Bake till warm, about 30 min.
    6. Makes 8servings. 3 grams of fat per serving.
