    Baked Black Peppered Fish with Buttered Onions

    Luckily my son challenged me yesterday..he told me to make Baked Black Peppered Fish! . I don't know where he get the idea, perhaps being a Black Peppered Chicken lover himself, he wanted to try something new with black pepper sauce. The timing is really perfect and so is the baked fish. I haven't thought about fish and black peppered sauce anyway but the result is surprisingly good.

    Ingredients

    • 4 medium slices of fish, (fillet fish I think is best)
    • dash of salt
    • dash of white ground pepper
    • 1/3 cup of cornstarch
    • some oil for frying
    • 1/2 cup oyster sauce
    • 2 tsp dark soy sauce
    • 2 tsp rice wine
    • 2 tsp ground black pepper or less ( you can actually use fresh black peppercorns)
    • 1 tsp ground white pepper
    • 1 medium onion sliced like rings, not so thin but not thick
    • 1 tbsp oil
    • 1/4 block of butter, divided into four parts

    Directions

    1. Season the fish with a dash of salt and pepper.
    2. Then coat the fish with corn starch.
    3. Heat some oil in the pan and fry the fish for 3 minutes. Set aside.
    4. In a bowl, mix the ff: oyster sauce, soy sauce, rice wine, black and white ground pepper. Set aside.
    5. Using the same pan where you fried the fish, leave a tbsp of oil and saute onion rings for 2 minutes. Set aside.
    6. Next using the same pan again, put the sauce you have made..the oyster,soy sauce and pepper mixture.
    7. Wait until the mixture boils and put the fish back...make sure the fish is coated well with the mixture. Cook for about 5 minutes.
    8. Turn off the heat and prepare your baking pan. Put aluminum foil at the bottom of baking dish.
    9. Then start to lay down the fish side by side. Put onion rings on top and garnish with butter slices. Cover loosely with aluminum foil.
    10. Baked at 350 or 180 for 40 minutes.
