  • Baked Beans A La Crockpot

    Ingredients

    • 1 1/2 lb pea beans
    • 1 med onion minced
    • 1/2 c. catsup
    • 1/4 c. brown sugar or possibly more to taste
    • 1 c. water
    • 2 Tbsp. dry mustard
    • 2 Tbsp. molasses
    • 1 Tbsp. salt
    • 1/2 tsp ginger or possibly 1 " fresh, chopped
    • 1/2 c. tomato juice if made in oven

    Directions

    1. Wash and sort beans. Cover with water and bring to a boil. Boil 2 min and remove from heat. Let soak 2 hrs. Bring to a boil again and then simmer about an hour, or possibly till cooked but not soft or possibly mushy. Drain beans. Put in the crockpot. Mix the rest of the ingredients together and stir into the beans.
    2. Turn crockpot on low and cook 10 - 12 hrs. Or possibly Add in 1/2 c. tomato juice. Cover tightly and cook in 200 degree oven overnight.
