  • Baked Apples With Dates, Almonds And Rum

    Ingredients

    • 1/4 c. plus 1 1/2 tbsps. unsalted butter melted plus additional for brushing
    • 1/4 c. dark rum
    • 1/4 c. apple juice
    • 1/2 c. golden sugar packed
    • 2 lrg egg yolks
    • 1 Tbsp. whipping cream
    • 2 tsp chopped peeled fresh ginger
    • 2 tsp all-purpose flour
    • 1 tsp grated lemon peel
    • 1/2 c. toasted almonds finely minced
    • 6 x pitted dates minced
    • 4 lrg Golden brown Delicious apples (about 2 pounds) Whipped cream

    Directions

    1. Preheat oven to 350 degrees. Mix 1/4 c. butter, rum and apple juice in 8-by-8-inch glass baking dish. Mix brown sugar, egg yolks, whipping cream, ginger, flour, lemon peel and remaining 11/2 Tbsp. melted butter in small bowl till smooth. Fold in almonds and dates. Set aside.
    2. Slice off top of apples, and using melon baller, scoop out stem end and entire core of apples, being careful to leave bottom intact. Using vegetable peeler, remove 1-inch-wide strip of peel from around top of cavity. Pack cavities to top with almond mix. Arrange apples in prepared dish. Brush exposed apple surfaces with additional melted butter.
    3. Bake about 45 min, brushing occasionally with juices and covering loosely with foil if filling is browning too quickly. Serve hot with whipped cream.
    4. Makes four servings.
