• Bacon, Ham And Swiss Quiche

    • 6 x strips bacon
    • 1 c. minced peeled onion
    • 1 x unbacked 9" pie crust
    • 1/2 c. shredded Swiss cheese
    • 1 1/2 c. whipping cream
    • 4 x Large eggs
    • 1/2 tsp salt
    • 1/4 tsp grnd nutmeg
    • 1/8 tsp freshly-grnd white pepper
    • 1/2 c. diced cooked ham


    1. Preheat oven to 350 degrees.
    2. Cook bacon in a medium skillet till crisp. Remove from pan and drain on paper towels; crumble. Drain all but 1 Tbsp. of fat from skillet. Saute/fry onion over medium-high heat till tender, about 4 min; set aside.
    3. Sprinkle crumbled bacon on the bottom of unbaked pie crust. Top with onion and cheese.
    4. In a medium bowl, whisk together cream, Large eggs, salt, nutmeg and pepper till well blended. Stir in ham. Pour into pie crust and bake for 30 min, or possibly till center is set.
    5. This recipe yields 6 servings.
    6. Comments: Be sure which your pie pans are 9-inch pans or possibly they will overflow!
