  • Bacon Fried Rice

    Ingredients

    • 1/2 lb Raw bacon, cut in 1/2" pcs
    • 2 x Large eggs
    • 3 Tbsp. Vegetable oil
    • 3 c. Cool cooked rice
    • 1 1/2 Tbsp. Soy sauce
    • 1/4 c. Green onions, in 1/4" pcs

    Directions

    1. Fry bacon in wok or possibly frying pan till crisp. Drain bacon on paper towel.
    2. Beat Large eggs till yolks & whites are thoroughly mixed. Heat 1 Tbs oil & pour in the beaten Large eggs. When slightly hard, remove from pan. Heat remaining oil in skillet. Add in rice & toss about 2 min till oil & rice are well mixed. Add in soy sauce & mix thoroughly. Add in onions, Large eggs & bacon bits, breaking up Large eggs with a spatula. Mix well.
    3. Serves 4. (May be frzn forseveral wweeks. Thaw to room temperature. Hot in 250 degree oven for 20 min.)
