  • Bacon, Bean, And Garlic Soup

    Ingredients

    • 8 ounce Lean Smoked Back Bacon slices
    • 1 x Carrot, sliced thinly
    • 1 x Celery stalk, sliced thinly
    • 1 x Onion, minced
    • 1 Tbsp. Oil
    • 3 x Garlic cloves, sliced
    • 3 c. Warm vegetable stock
    • 7 ounce Can minced tomatoes
    • 1 Tbsp. Minced fresh thyme
    • 14 ounce Can Cannellini beans, liquid removed
    • 1 Tbsp. Tomato paste Salt and Pepper Grated Cheddar Cheese

    Directions

    1. Chop 2 slices of the bacon and place in a bowl. Microwave on HIGH power for 3-4 min till fat runs out and the bacon is well cooked.
    2. Stir the bacon halfway through cooking to separate the pcs. Transfer to a plate lined with paper towels and leave to cold. When cold, the bacon pcs should be crisp and dry. Place the carrot, celery, onion, and oil in a large bowl. Cover and microwave on HIGH power for 4 min.
    3. Chop the remaining bacon and add in to the bowl with garlic. Cover and microwave on HIGH power for 2 min.
    4. Add in the stock, the contents of the can of tomatoes, the thyme, beans, and tomato paste. Cover and microwave on HIGH power for 8 min, stirring halfway through. Season to taste. Ladle the soup into warmed bowls and sprinkle with the crisp bacon and grated cheese.
