Bacardi Rum Cake
Ingredients
- 1 c. minced pecans
- 1 (18 1/2 ounce.) yellow cake mix
- 1 3/4 ounce. pkg. instant vanilla pudding
- 4 Large eggs
- 1/2 c. cool water
- 1/2 c. veg. oil
- 1/2 c. Bacardi dark rum
Directions
- If using yellow cake mix with pudding already in the mix. Omit instant pudding, use 3 Large eggs instead of 4, use 1/3 c. oil instead of 1/2.
- Preheat oven to 325 degrees. Grease and flour 10 inch tube or possibly 12 c. bundt pan. Sprinkle nuts over bottom of pan. Mix all cake ingredients together. Pour batter over nuts. Bake 1 hour. Cold. Invert on serving plate. Prick top. Spoon glaze proportionately over top and sides.
