Baby Spinach And Chick Pea Salad
Ingredients
- 8 ounce baby spinach minced
- 1 can chick peas liquid removed
- 1/2 med red onion finely minced
- 1 Tbsp. balsamic vinegar
- 3 Tbsp. extra-virgin extra virgin olive oil Coarse salt to taste Freshly-grnd black pepper to taste
Directions
- Combine minced spinach, chickpeas and minced onions in a bowl. Add in 1 Tbsp. balsamic vinegar and 3 Tbsp. (3 turns of the bowl in a slow stream) extra-virgin extra virgin olive oil. Toss well to coat and combine. Season salad with salt and pepper, to your taste.
- This recipe yields 4 servings.
