Avocado, Smoked Salmon And Spinach Salad
Ingredients
- 1/2 lb Fresh baby spinach
- 2 x Ripe avocados
- 1 Tbsp. Lemon juice
- 3 Tbsp. Extra virgin olive oil
- 1 Tbsp. Balsamic vinegar Salt and freshly grnd pepper
- 1/4 lb Sliced smoked salmon
- 1 tsp Finely minced tarragon
Directions
- Finely shred the spinach. Mix together extra virgin olive oil, balsamic vinegar, tarragon, salt and pepper.
- Halve avocados. Remove stones, peel and chop. Toss with lemon juice.
- Cut smoked salmon into strips.
- Toss together spinach and extra virgin olive oil dressing. Gently mix in avocado and smoked salmon. Serve.
