Autumn fruit compote

- 2 Granny Smith apples
- 2 red William pears
- 3 ripe plums
- 150g fresh blackberries
- 150g fresh raspberries
- 2 tablespoons agave nectar
Directions
- PRE-HEAT THE OVEN TO 190ËC/170ËC FAN/GAS 5
- Peel and core the apples and pears and cut into quarters. Wash and halve the plums, remove the stone with the help of a spoon or knife and cut into quarters. Place the berries in a colander and rinse under running water.
- Arrange the apples, pears and plums in a shallow ovenproof dish. Drizzle with one tablespoon of agave nectar, cover with kitchen foil and bake for 30 minutes.
- Remove the dish from the oven, add the berries and the remaining tablespoon of agave nectar, re-cover with foil and return to the oven for a further 10-15 minutes or until the fruit is soft and juicy but still retains its shape.
- Leave to cool completely, then transfer into an airtight container and keep refrigerated. Use within 3 days.
