Festive Gingerbread Cookies decorated with Royal Icing are always a hit at Christmas. I love this recipe because the dough is cooked on the stove and makes the house smell good during the holidays.

    Ingredients

    • 1 cup sugar
    • 1 cup unsalted butter
    • 1/2 cup dark unsulphered molasses
    • 1 tsp. ground cinnamon
    • 1 tsp. ground allspice
    • 1 tsp. ground ginger
    • 2 large eggs, lightly beaten
    • 1 tsp. white or cider vinegar
    • 5 cups all-purpose flour
    • 1 tsp. baking soda

    Directions

    1. In large pot, mix sugar, butter, molasses, and spices.
    2. Bring to boil over medium heat, stirring constantly.
    3. Remove from heat and cool to lukewarm.
    4. When cooled, add eggs and vinegar. Mix well.
    5. In large bowl, blend flour and baking soda with whisk.
    6. Add flour and baking soda to molasses mixture, and mix to a smooth dough.
    7. Cover with plastic wrap and chill overnight until firm.
    8. Roll dough in portions on floured board to 1/8" thick for small cookies, and 1/4" thick for large cookies. Use cookie cutters to cut desired shapes.
    9. Bake on ungreased cookie sheets at 350 degrees for 10-12 minutes, until edges begin to brown.
    10. Remove cookies to rack to cool completely before decorating.
    11. Note: Cookies will harden as they cool.
    12. Frost with Royal Icing and sprinkle with decorations.
