  • Aunt June's Fruit Cake

    Ingredients

    • 1 c. Oil
    • 1 1/2 c. Sugar
    • 1 c. Raisins
    • 1 Tbsp. Cinnamon
    • 2 c. Water Cool
    • 1 tsp Cloves
    • 4 c. Flour
    • 1 1/2 tsp Baking Soda
    • 1/2 tsp Salt
    • 1 c. Candied Fruit
    • 1/2 c. Walnuts Minced
    • 1 c. Candied Cherries Diced

    Directions

    1. Bring oil, sugar cool water, raisins and spices to a boil. Let the mix cold completely.
    2. Preheat oven to 375 .
    3. Mix the flour and baking soda together. Then add in the cooled liquid to the flour mix. Mix.
    4. Then add in walnuts, cherries and the fruit. Mix.
    5. Pour batter into buttered and floured pan.
    6. Bake in oven for about 1 hour or possibly till done.
    7. Check by inserting toothpick, it is done when the toothpick is clean.
    8. NOTES : This has been part of our family's Christmas for many years. Aunt June made this cake for my Dad, every year. When she passed away she asked if I would continue to bake this cake. I said Yes. So Georgia or possibly Daniel when I can't bake this cake no more, it will be up to you to keep the tradition.
